These technologically advanced products promote greater profitability and improved quality in any foodservice operation.
Each model is capable of performing one of three different functions: soft chilling to 38°F for delicate food products, hard chilling to 38°F for dense, large sized foods and shock freezing all food types to 0°F. Chilling food from 180°F to 38°F is normally accomplished in 90 minutes or less. Shock freezing food from 180°F to 0°F is done in less than 240 minutes.
"These new blast chillers/shock freezers are designed to match up to Convotherm by Cleveland Combi Ovens to create a completely integrated food production system, creating new efficiency opportunities for the foodservice kitchen, regardless of the size of the operation," states Bill Keske, Vice President of Marketing for Delfield.
ConvoChill by Delfield is a fully featured offering with a sophisticated, but easy to use electronic control package that includes a cycle control with core probe, temperature and time display, status display, integrated on-board printer, preset programming capability of up to 99 programs and a hot gas defrost system. Other standard features include an UV lamp sterilizing cycle, easily removed and cleaned condenser filters on T5 and T14D models and HACCP record keeping memory.
